It has been cloudy and rainy here in Northern California for WEEKS. Rain, hail, thunderstorms, you name it, we’ve had it. On Monday it hailed so much that Jordan went outside and collected it to make a snowball. I haven’t seen a winter like this in probably 20 years…that’s how crazy it’s been. Now, I’m not really complaining and I feel bad even saying I am tired of rain because we need it – desperately. But it’s almost been TOO much rain; there’s been flooding and they’ve had to let water out of reservoirs. We’ve had to drain our pool so it won’t overflow so many times I’ve lost count.
As much as we need the rain…I have been begging Mother Nature for a sunny day or two. I have so many recipes I have to make and I need something other than dark gray clouds to work with. She finally complied this week and I got some good sunlight Tuesday and yesterday…so I’ve made 3 recipes PER DAY. I still have more to go today and tomorrow to bank for the next round of storms.
Anyway, I’m saying that I’m in love with these photos because it was the first time in days that I didn’t need to wear a rain jacket or cry because I couldn’t work. Plus, that sunlight just makes this Tiramisu POP, doesn’t it?
We all love Tiramisu, right? It’s one of my most-loved desserts…and this version uses SHORTBREAD cookies, which makes it even better.
I discovered how much y’all loved tiramisu when I posted my mousse recipe a few years ago. That one is still always in my top referred and I think it’s because it’s so pretty and tasty but also because of how EASY it is. Now, most people will say, but “Dorothy, you be crazy. Tiramisu is always easy to make!” and I agree on that point. But it’s NOT always easy to find the ingredients you need to make a traditional tiramisu.
I live in a suburb of Sacramento, which is a pretty metropolitan area. I don’t consider where I live rural by a long shot, and we have access to everything we need in under a few minutes of drive time, which is why I was so surprised that I couldn’t find marscarpone cheese or ladyfingers very easily. Sure, I can find the cheese at upscale grocery stores (for about $8) but nowhere could I find any ladyfingers (and believe me, I looked at EVERY grocery store near me).
I call this tiramisu EASY not just because it’s a snap to whip up (it’s done in under 30 minutes) but because the ingredients are everyday ones you can find anywhere. When I’m making a dessert like this it’s usually because I’m entertaining and there’s already so much to do I don’t want to have to hunt for my ingredients.
